Tell us about @jw.works - what is this Instagram account is about?
I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?
I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

Where do you get your inspiration for your recipes?
My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

How did you come up with Matcha Rotiboy recipe?
Switched coffee to AJISAI / Matcha for a new and refreshing Rotiboy flavour.

With the subtle AJISAI / Matcha flavour that lingers in your mouth with every bite of this Matcha Rotiboy, it makes a good pair with a cup of coffee or tea for breakfast!

RECIPE

Matcha Rotiboy

Preparation time: 35 min
Cooking time: 2 hr 30 min
Total time: 3 hrs

Ingredients

Bun
110g Milk
250g Sugar
4g Yeast
200g Bread Flour
30g Butter
1/2 Egg
10g Butter x 8pcs (to wrap in the bun)

Matcha Crust
4g AJISAI / Matcha Powder
5g Hot Water
35 Icing Sugar
1/2 Egg
40g Cake Flour
40g Butter

*This recipe uses Thermomix.


Method For Bun

  1. In mixing bowl, add in 110g Milk, 25g Sugar, 4g Yeast in mixing bowl and set the Thermomix to 2 mins / 37C / speed 2.
  2. Add in 200g bread flour, half an egg, 3g Salt, set knead dough mode for 3 mins.
  3. Add 30g butter, knead for another 3 mins.
  4. Take out the dough, shape it into a ball and let it rise for one hour
  5. After one hour, divide the dough in 8 portions, make in ball shapes and let it rest for 15 mins.
  6. Cut the cold butter into cubes at 10g each x 8
  7. Roll out the dough and wrap in butter cube (10g), roll into ball shape and repeat on the remaining dough.
  8. Let them proof for another 1 hour, pipe the matcha mixture on top of the bun and bake at 180C for 25 mins.

Method For Matcha Crust

  1. In a large bowl, put 4g AJISAI / Matcha powder, 5g hot water and 35g icing sugar, stir to combine.
  2. Add half an egg mixture, 40g cake flour, mix well.
  3. Lastly, add 40g butter stir until well combined and transfer to a piping bag and chill in the refrigerator for at least 15 mins.
