Tell us about @jw.works - what is this Instagram account is about?
I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?
I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

Where do you get your inspiration for your recipes?
My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

How did you find using AJISAI / Matcha in this recipe?
Center-filled with red bean paste and goes really well with the matcha flavour. As a dessert, you can top it off with a scoop of ice cream too!

RECIPE

Matcha Red Bean Mochi Waffle

Serves 12-15 waffles (palm-sized).
Preparation time: 5 min
Cooking time: 20 mins
Total time: 25 min

Ingredients

250g Mochi Waffle Premix
80g Corn oil
10g AJISAI / Matcha powder
150g Milk
40g Eggs
Some sweet read bean / red bean paste


Method To Assemble

  1. In Thermomix mixing bowl, add in Mochi Waffle Premix, AJISAI / Matcha powder, corn oil, milk and eggs and set 30seconds at speed 5.
  2. Scrap bowl and set another 30 seconds at speed 5, let the batter rest for 15 mins, at the meantime preheat waffle iron.
  3. Scoop batter on waffle machine and add in red bean and top it off with some batter, bake for 3-5 mins or until golden brown.
  4. Serve it hot.
