Your tagline mentions your recipes are 70% healthy and 30% indulgent — how did your journey with food start?
Everything started ever since the pandemic. My makeup career totally stopped. Instead of continuing to feel stressful and depressed, I decided to heal myself with food. I started to create my own ritual of life by cooking, taking photos, videos and recipe-sharing on my IG account. Most of my posts are about my healthy daily eats. Sometimes I do indulge myself with my favorite foods too. That’s why my tagline mentioned 70% healthy and 30% indulgent.

Any tips to your viewers on living a health-conscious life?
There is such a strong connection between happiness and food. Healthy eating can be fun and creative, but don't forget to indulge yourself with your favorite food every now and then. Be happy and wise with the food choices you make. You deserve to nourish your body with the nutrients it needs to lead a healthy life.

As the health benefits of Matcha are endless, it's definitely great to consume it in your daily meals!

How did you come up with Healthy Wakoucha Yam Cake recipe?
I’m currently on diet but still craving for dessert. So I made myself this No Oil No Sugar cake but still full of flavour.

How did you find using RIKKA / Wakoucha powder for the recipe?
I absolutely love the fragrance of RIKKA / Wakoucha. I can taste the slight floral fragrance in this cake. With the addition of wakoucha powder, the cake is full of flavour but not too heavy. It also makes me feel satisfied even when on a diet.

RECIPE

Healthy Wakoucha Yam Cake

Serves 1 whole cake (7-inch pound cake mold)
Prep time: 10 mins
Cooking time: 1 hr
Total time: 1 hr 10 mins

Ingredients

300g yam
10g monk fruit sweetener
60ml milk

150g greek yogurt
3 eggs
15g monk fruit sweetener
30g cake flour
15g corn starch
½ tbsp RIKKA / Wakoucha powder


Method To Assemble

  1. Steam the yam for 20 minutes or until soft, add in milk, monk fruit sweeter and mash it until all ingredient mix well.
  2. Separate the egg yolk and egg white into two bowls.
  3. In the egg yolk bowl, add in greek yogurt, cake flour and corn starch and wakoucha powder and mix well.
  4. Add some lemon juice into the egg white, add in the monk fruit sweetener 3 times and beat the egg white until soft peak.
  5. Combine the egg white and egg yolk mixture, make sure to mix it completely then pour the mixture into the mold which is covered with the baking sheet.
  6. Preheat the oven at 170°C, using water bath baking method to bake the cake at 170°C for 40 minutes.
