INTERVIEW WITH @LIANN__B

Your food/drink photos on Instagram are amazingly aesthetic and dream-like — how did your passion start?

I used to be a frequent cafe hopper in the past, as I always enjoyed the cafe atmosphere. There were a lot of cafes during the cafe trend waves – but after some time I found most of the menus to be similar & simple. As a home person, I started my "home cafe", and began decorating my home like a cozy cafe. I cooked & styled the food, and of course without wasting my effort, I took photos & shared them with my friends.

I found photography as a way to express my passion for food, and am lucky enough that I had some guidance from a close friend who loves photography as well. I did a lot of research on food photography. After a lot of trials and error, I questioned myself: “Why do I need to follow others? I should have my own style which is my home cafe”. That’s when I started to make my IG like a cafe’s account, but it’s actually my home, with the food that I passionately created.

What do you do for a living, and how do you balance work and passion?
I’ve been working in the fashion industry for years as a Fashion Designer & Merchandiser. Being creative is a MUST in my everyday life. I love doing all sorts of styling & matching, even with food that I love! With creativity, everything can turn into something else, as long as you don’t restrict any possibility with those common knowledge.

Any personal tips for your viewers on taking mesmerizing photos of their matcha creations?

Bring out the best of the main subject that you need to present in the photos. Of course when it comes to food/drinks, the food in the photos should not only look good by its plating, but it must also be appetizing.

I also chose dinnerware that best matches with the food/drinks that I’ve made. Sometimes a fancy background can be too overwhelming, so it’s better to keep the background as simple as you can.

How did you come up with Creamy Matcha Toast?
Yoghurt is my all time favourite snack; I love coming up with new snacks and recipes because of how versatile it is. One thing I keep going back to is mixing my favourite flavours, spreading it on toasts or pancake, or just eating it directly with toppings. As a Matcha lover, I just had to mix yoghurt with Matcha powder and vanilla whey protein - it reminds me of a delightful Matcha cheesecake. I substitute protein powder with condensed milk as it is much more accessible to everyone.

Why did you choose KIKU / Matcha powder for this recipe?
There isn't a specific kind of Matcha to be used in this recipe - just the one you prefer! I like using KIKU / Matcha in this recipe as it gives this distinct, balanced flavour with a touch of bittterness. Other Matcha powder or roasted green tea powder are fine too, though I do prefer to use the toasted, nuttier ones in my Matcha Peanut Spread as it brings out the peanut flavour.

What's the most enjoyable part of baking in your experience?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

RECIPE

Creamy Matcha Toast

BY @LIANN__B

Preparation time: 5 mins

Ingredients

4g KIKU / Matcha powder
50g Greek yoghurt
30g Sweetened condensed milk
10g Milk or water*
1 Toasted bread (to your liking)

* depending on preferred yoghurt thickness

Method To Assemble

  1. Toast your bread the way you like.
  2. Mix KIKU / Matcha powder, greek yoghurt*, sweetened condensed milk and milk or water until fully combined.
  3. Pour the Matcha yoghurt mixture on top of the toast, dust some Matcha powder and garnish by adding your preferred topping; I used juicy strawberries!
  4. Plate it and it's ready to serve.

* Notes:
This recipe is very versatile - you can add less milk or water to the mixture for a thicker consistency, or more milk or water for an oozy lava Matcha cream spread. The cream tatstes so much like Matcha cream cheese!

As for the yoghurt, I personally like to use Sunglo Greek yoghurt because it's so thick and creamy but doesn't taste as sour!

A healthier option for sweetened condensed milk will be 15g vanilla flavoured protein whey powder and extra 10g water.
