What do you do for a living?
I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?
Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?
I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetizing and visually appealing in the photo.

How did you come up with Black Sesame Matcha Latte recipe?
I came across a sesame matcha latte recipe online. It contains matcha, coffee, and black sesame, which are all my favourites in a drink. So I thought, why not recreate and modify this recipe?

This month’s theme is about first love. Tell us why you chose AJISAI / Matcha as your first love.
It’s tough to choose between all the Niko Neko Matcha, Houjicha, and Genmaicha! But after trying KIKU / Matcha, I fell in love with its savoury umami, with a strong pistachio-like nuttiness and a slight bitterness, like a balance of YURI and REN! I chose KIKU / Matcha for this recipe because its nuttiness complements well with black sesame. Besides, KIKU / Matcha and black sesame are known as antioxidants and contain other wellness benefits.

RECIPE

Black Sesame Matcha Latte

Ingredients

1 ½ tsp KIKU / Matcha powder
100ml Oat Milk (or any other milk preference)
80ml Coffee
8g Black Sesame Powder
1 tbsp Maple Syrup
A pinch of Charcoal Powder (optional)
Some Edible Roses
Ice

For Black Sesame Powder
50g Black Sesame
75g Glutinous Rice Flour


Method To Assemble

  1. In a cooking pan, toast black sesame seeds for 5 minutes over medium high heat. Pour it into a bowl and set it aside. Toast glutinous rice flour on medium low heat for 5 minutes or until it turns light brown.
  2. Separate the flour into 2 bowls, 50g and 25g, respectively.
  3. In a food processor or blender, pour in the black sesame seeds. Pulse until all the sesame seeds are stuck to the blender wall. Use chopsticks to scrape them down and add in the 50g glutinous rice flour, 1/3 at a time. Pulse until the powders are well combined before adding another.
  4. Add black sesame powder into the 25g glutinous rice flour. Mix until there’s no trace of glutinous rice flour. Store it in an airtight container.
  5. Skip steps 1 to 4 if you already have premixed black sesame powder.
  6. Using YUKIWA / Matcha Mixer, whisk together 8g of black sesame powder into hot coffee with maple syrup and a pinch of charcoal powder (optional) for colouring. Sift the mixture and set it aside.
  7. In Matcha Whisking & Measuring Cup, sift KIKU / Matcha with Matcha Metal Sieve into 50g of oat milk and whisk until creamy and well combined.
  8. In a glass, add the ice cubes, black sesame coffee mixture, remaining oat milk, and matcha mixture, respectively.
  9. Sprinkle some edible roses on top as a finishing touch.
