What do you do for a living?

I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?

I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetising and visually appealing in the photo.

How did you come up with Matcha Glutinous Rice Muffin? Why did you choose Matcha for this recipe?

I have some leftover glutinous rice flour at home after making the Matcha Snow Skin Mooncake for Mid Autumn Festival, and I came across a recipe for Chocolate Glutinous Rice Muffin. It looks pretty simple and can be done within an hour so I thought, "why not modify it with Matcha instead?"

To be honest I can't decide between Matcha, Houjicha and Genmaicha for this recipe at first! But since I'm using chocolate chips as the toppings and fillings for this recipe, I decided to choose YURI / Matcha to create a bitter-sweet combo.

RECIPE

Matcha Glutinous Rice Muffin

Ingredients

160g Glutinous Rice Flour
10g YURI / Matcha Powder
160g Almond Milk (or any other milk)
1 Egg
40g Sugar
40g Vegetable Oil
3g Baking Powder
A pinch of salt

Toppings:
Some chopped chocolate and chocolate chips
OR
Some chopped marshmallow



Method To Assemble

  1. In a bowl, combine egg, sugar, milk and oil. Mix well.
  2. Add in glutinous rice flour, YURI / Matcha powder, baking powder and salt. Mix well until the batter becomes smooth.
  3. Line 6 muffin cups on baking pan. Fill the batter into each muffin cups, about half.
  4. Place a few pieces of chopped chocolate (or marshmallow) in the middle.
  5. Fill up the muffin cup with more batter until the chocolate (or marshmallow) is completely covered.
  6. Sprinkle some chocolate chips (or marshmallow) on top.
  7. Preheat oven at 180°C and bake for 30 min.
