Tell us about @jw.works - what is this Instagram account is about?

I started jw.works as a place to share some nice photos that I took when I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope to be able to deliver my stories and message through my works.

I started jw.works as a place to share some nice photos that I took when I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope to be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?

I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

You are great in food styling too, with such beautiful visuals of your bakes on your IG account. Does being a graphic designer help in enhancing your creativity in food styling?

Photography, by extension food styling, is generally the interest of a designer as well as an essential skill set. These skill sets and past experiences definitely became an added advantage for my contents. I would usually have a good idea of how I want the outcome to be even before making them.

How did you come up with the idea for your recipes?

My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

Why did you particularly choose Matcha / Houjicha / Genmaicha for this recipe?

I've always loved these flavors all along. They have a very distinctive fragrance and notes, these are really great for making different beverages and desserts. Also for the same reason, these flavors provide unlimited possibilities for making your own dessert or drink. I'd personally recommend YURI / Matcha if you're new to Niko Neko, I'm very sure you'll love them.

RECIPE

Houjicha Chiffon Cake

Recipe uses a 6-inch mould

Ingredients

Ingredients A
5 Egg Yolks
40g Caster Sugar
45g Vegetable Oils
55g Milk
80g Cake Flour
5g TSUBAKI / Houjicha Powder

Ingredients B
5 Egg White
60g Caster sugar
A bit of lemon juice



Method To Assemble

  1. Get a big bowl, whisk egg yolks and sugar, stir well. Add in the rest of the ingredients A and mix well until the batter is smooth, set aside.
  2. Put 1/2 tbsp of lemon juice into the egg whites and beat them until stiff peaks (gradually add in caster sugar in 3 times).
  3. Take 1/3 of the stiff egg white mixture into the bowl with batter base and use spatula to fold batter gently in twisting method. Then, put the remaining egg yolk batter back to the egg white bowl and gently fold in nicely. It should be light, fluffy and high in volume batter.
  4. Pour the batter into a chiffon pan and bake for 60 mins at 160 F.
  5. Cool the cake upside down immediately after baking.
  6. Serve the chiffon cake with whipped cream and dust with TSUBAKI / Houjicha powder.
