Created by Shur Lim, her Instagram started out as a way to share her recipes with friends and soon it evolved into what it is now -- filled with tasty-looking recipes yet with simple ingredients and easy to follow instructions.

I started @shurthatwithme this January 2019 without knowing it would become what it has now! It started off with friends being interested in my wellness habits and wanting to see what I was eating. They noticed how, as a Malaysian and frequent traveller, I was still able to enjoy all foods and stay in good health and shape. (Yep, the food you see on my account are not the only things I eat!)

I started @shurthatwithme this January 2019 without knowing it would become what it has now! It started off with friends being interested in my wellness habits and wanting to see what I was eating. What does a diet mean to you?

Eating and living well is not about strict and rigid dieting – even less about punishing your body into submission. Maintaining a wholesome diet on a regular basis is also not as difficult as it seems. For me, nutrition is a combination of awareness and intentionality. It all starts with – and is sustained by – real, simple, and whole foods! The good news is that this is attainable wherever you are – whether or not you spend time in the kitchen.

Your instagram account @shurthatwithme is filled with beautiful pictures of healthy food and recipes that you came up with. How did that start?

The Instagram account began as a simple photo reel of how I added bits of “nutritional intentionality” to the foods I was making. Soon enough, friends and family started asking how I made them, so the recipe sharing began!

Kitchen-things aside, tell us about your personal life. What do you do?

I’m a graduate student completing a Master of Educational Technology, where I enjoy exploring the interplay between pedagogy, cognition and design.

RECIPE

Nutty Matcha Energy Bars with Dark Chocolate Drizzle

Ingredients

Matcha filling:
1/2 cup almond milk
1 cup raw cashews
1 tbsp KIKU / Matcha powder
1/4 cup honey

Crust:
1/2 cup roasted almonds
3/4 cup of pitted dates or raisins
1 tbsp coconut oil
pinch of salt

Dark chocolate drizzle:
2 tbsp dark chocolate bar (or dark chocolate chips)
Coconut oil / water




Method For Matcha Energy Bar

  1. Soak 1 cup of raw cashews in warm water and set aside, then begin preparing crust layer.
  2. In a food processor, pulse and blend all of the crust ingredients until a sticky consistency is formed. Note: Using a high-speed blender to create the matcha filling will give you a smoother and creamier result, otherwise, a food processor will work well to combine the ingredients into a more textured filling.
  3. Press crust mixture into a 6x6 pan lined with parchment paper.
  4. Chill in the freezer for at least 20 minutes while moving on to prepare filling.
  5. Combine all of the filling ingredients and blend until smooth.
  6. Pour and spread matcha filling over chilled crust in an even layer.
  7. Chill in refrigerator (not the freezer!) for at least 4-6 hours, or overnight for best results.



Method For Dark Chocolate Drizzle

Melt about 2 tbsp of a dark chocolate bar (or dark chocolate chips) with some coconut oil or water in a microwave.




Method To Assemble

To serve, drizzle melted dark chocolate and chill in the freezer for 5 minutes before cutting into individual serving bars. In picture: dark chocolate drizzle and cacao nibs.
