What do you do for a living?

I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?

I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetising and visually appealing in the photo.

How did you come up with this recipe? Why did you choose Matcha / Houjicha / Genmaicha for this recipe?

Before deciding on which powder to use for each recipe, I will imagine the taste, whether it matches with other ingredients in the recipe. Then, I will visualise the outcome of the creations on how it will look like with Matcha, Houjicha and Genmaicha. Sometimes, it’s so hard to decide because these 3 flavours are equally good!

How did you come up with this recipe? Why did you choose Matcha / Houjicha / Genmaicha for this recipe?
Before deciding on which powder to use for each recipe, I will imagine the taste, whether it matches with other ingredients in the recipe. Then, I will visualise the outcome of the creations on how it will look like with Matcha, Houjicha and Genmaicha. Sometimes, it’s so hard to decide because these 3 flavours are equally good!

RECIPE

Mini Matcha Chiffon Cake

Ingredients

60g Cake flour
10g KIKU / Matcha powder
4 Egg Yolks
4 Egg White
40g Water
40g Oil
70g Sugar
Few drops of vinegar
A pinch of salt

Toppings:
Chocolate sauce/ganache
4 pieces of marshmallows
Crushed peanut



Method To Assemble

  1. Combine 4 egg yolks, 40g oil and 40g water and mix well.
  2. Sift in 60g flour and 10g KIKU / Matcha powder, mix until even.
  3. Add few drops of vinegar and a pinch of salt into egg white and whisk with electronic whisker. Slowly add in sugar, separate into 3 times.
  4. Whip the egg white until it forms a soft peak.
  5. Fold 1/3 of egg white evenly into the matcha mixture.
  6. Pour the matcha mixture into remaining egg white and mix evenly using folding method.
  7. Pour the batter from high angle into the cake mould, tap the mould gently on the table for a few times to remove bubbles.
  8. Preheat oven at 160°C and bake for 35 min.
  9. Turn the mould upside down to cool. Remove cake from mould once it cools down completely.
  10. Cut the cake into 4 slices evenly. Drizzle with chocolate ganache and sprinkle some peanut on top.
  11. Place a marshmallow on top and drizzle more chocolate.
