First things first, what is @katfewd all about?

@katfewd started off as a little Instagram page where I would share my cooking adventures and document my trials and errors along the way. As my number of recipes grew, it made sense to start a blog where I recipe develop and share my favourite recipes!

 @katfewd started off as a little Instagram page where I would share my cooking adventures and document my trials and errors along the way. As my number of recipes grew, it made sense to start a blog where I recipe develop and share my favourite recipes!

How did your passion with cooking start and what kind of foods are you most passionate about?

I started cooking during my gap year in order to (attempt) to eat less instant noodles in my second year of university, and realised I had so much fun in the kitchen! I love baking and experimenting with new recipes; you’ll find me getting my hands dirty kneading dough or watching food videos on YouTube for hours on end!

I love all food — so there’s all sorts of things I make, but in general I try to eat quite healthily! I enjoy finding ways to give my favourite foods healthy twists using more nutritious ingredients. I’m also a big believer in supporting local produce and brands, which I incorporate into my cooks and bakes as much as possible!

Aside from creating recipes, what do you do in your daily life?

I’m currently still in university, but other than that I enjoy being outdoors (definitely have to exercise to burn off those calories from trying out new recipes!) I also love spending time with (and cooking for) my family and friends and playing with my 14-year-old chihuahua, Scruffy.

How did you come up with your Matcha Mango Tea Cooler recipe?

I love adding soaked chia seeds to drinks, and I thought it gave this refreshing tea cooler extra texture.

How did you enjoy using AJISAI / Matcha when creating recipes?

I loved the nuttiness of AJISAI / Matcha! It is especially apparent when drinking it as a matcha latte.

Personal tips for your recipe viewers when working with Matcha recipes.

Be creative and go all out! Matcha powder is definitely a hidden gem in baking. Not only does it taste delicious but it is also full of all the good stuff — antioxidants, vitamins and minerals! Not to mention, with its vibrant shade of green it makes your cakes and tarts look divine!

RECIPE

Matcha Mango Tea Cooler

Preparation time: 5 mins
Cooking time: 5 mins
Hands-off time: 30 mins
Total time: 40 mins

Ingredients

½ small mango 
1 tsp AJISAI Matcha Powder 
2 tsp chia seeds 
1 tsp sugar syrup (optional) 
1 tray ice cubes



Method To Assemble

1. Soak the chia seeds in ¼ cup water for 30 minutes, or until a chia gel is formed
2. Dice mango into small cubes, or blend until smooth. Add to the bottom of a glass.
3. Spoon 1tsp of the chia mixture into the cup, then add in the sugar syrup (optional)
4. Fill to the top with ice.
5. Whisk the AJISAI / Matcha Powder with hot water, until dissolved in a cup. Add in ⅔ cup cold water to the matcha.
6. Pour the matcha mixture into the glass with the mango, and top with more soaked chia seeds. Stir before drinking!
