Tell us about @jw.works - what is this Instagram account is about?

I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?

I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

You are great in food styling too, with such beautiful visuals of your bakes on your IG account. Does being a graphic designer help in enhancing your creativity in food styling?

Photography, by extension food styling, is generally the interest of a designer as well as an essential skill set. These skill sets and past experiences definitely became an added advantage for my contents. I would usually have a good idea of how I want the outcome to be even before making them.

Where do you get your inspiration for your Matcha Kuih Ketayap recipe?

In conjunction with Merdaka Day, I decided to twist one of Malaysia's local dessert - Kuih Ketayap, with matcha powder! It was initially just a test run, but surprisingly was a successful creation. The hint of matcha powder complimented the crepe and coconut filling, which provided this very addictive yet contrasting flavour and texture. This sweet treat is best served as a dessert or for an afternoon tea.

How did you come up with Matcha Kuih Ketayap recipe?

I decided to use YURI / Matcha powder as it gives not only gives this beautiful green hue that i love, but also gives off subtle notes of sweetness and umami flavour that balances out the sweet coconut filling. Top amplify the taste of matcha, I decided to add in AJISAI / Matcha powder for a slightly bitter lingering aftertaste. It's definitely worth a try!

Where do you get your inspiration for your recipes?

My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

RECIPE

Matcha Kuih Ketayap

Makes 12-14 pieces
Prep Time: 20 mins
Cooking Time: 30 mins

Ingredients

Sweet Coconut Filling
200g Gula Melaka, cubed
40g Brown sugar
100g Water
300g Grated Coconut
2 tsp Cornflour
A pinch of salt

Matcha Crepes
600ml Water
10g YURI / Matcha powder
10g AJISAI / Matcha powder
300g Plain flour
1 tsp Corn flour
1 tsp Salt
20g Vegetable oil
1 Egg
300g Sweet coconut filling



Method To Assemble

  1. To make the sweet coconut filling, add Gula Melaka, brown sugar, and into a saucepan and cook on low heat until sugar dissolves.
  2. Add desiccated coconut, a pinch of salt and corn flour then stir for 10 to 15 minutes. Transfer into a plate and let cool.
  3. For the Matcha crepes, sift YURI / Matcha and AJISAI / Matcha powder in the water then mix well.
  4. Add plain flour, corn flour, salt, vegetable oil and egg, then whisk till combine and sift for a smoother texture.
  5. Grease and heat a non-stick pan over medium heat, pour the batter onto the pan and swirl to cover the bottom of the pan.
  6. When the crepe is cooked, transfer to a plate to cool down, then repeat.
  7. Divide the sweet coconut filling into 10 to 12 equal portions.
  8. Place the filling onto the center of the crepe to form into a log shape before wrapping. Repeat with the rest and it's ready to be served!
