Tell us about @jw.works - what is this Instagram account is about?

I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope to be able to deliver my stories and message through my works.

I started jw.works as a place to share nice photos I had the opportunity to stumble upon — usually photos about interior, cafes & food. Basically anything that caught my attention. I'd also use the account to showcase some of my own works covering graphics works, food styling, calligraphy, photography and my recent interest — baking. I hope that I would be able to deliver my stories and message through my works.

How did you get into baking despite being a full time professional graphic designer?

I got into the baking trend during the MCO period. The shift to work-from-home, time became flexible thus making it easier to do things that I'm passionate about. I mostly spend the weekends tinkering with baking pastry & making dessert so juggle between work and kitchen fun during this period is pretty much manageable.

You are great in food styling too, with such beautiful visuals of your bakes on your IG account. Does being a graphic designer help in enhancing your creativity in food styling?

Photography, by extension food styling, is generally the interest of a designer as well as an essential skill set. These skill sets and past experiences definitely became an added advantage for my contents. I would usually have a good idea of how I want the outcome to be even before making them.

Where do you get your inspiration for your recipes?

My inspiration usually comes from desserts that I've tasted myself from different parts of the world, as well as those that I came across over IG and YouTube. I like to decorate my work nicely, as such, I do a lot of research online, which in turn also gives me inspiration for my next project!

How did you come up with your Matcha Fortune Cookie recipe?

Homemade fortune Cookie with personalised notes is a creative way to deliver message to your loved one. Be more creative and fun when writing message and you can do whatever shape you like too!
As Chinese New Year and Valentine’s Day are pretty close, so this will be a very sweet gift to your loved one or family.

Why did you use AJISAI / Matcha powder for this recipe?

Twisting the original fortune cooking by adding YURI / Matcha or AJISAI / Matcha powder to make it more flavourful and colourful. The overall fortune cookie gift box look athestically pleasing and gorgeous!

RECIPE

Matcha Fortune Cookie

Recipe makes 20-30 cookies

Ingredients

90g Egg Whites, room temperature
90g Caster Sugar
60g Butter, melted
1 tsp Vanilla Essence
60g Water
100g Plain Flour (for matcha flavour : 5g AJISAI / Matcha powder, 95g plain flour)
1 pinch of fine salt



Method To Assemble

  1. Write an individual message on each piece of paper and set aside.
  2. Whisk egg whites and sugar until frothy, then add in melted butter, vanilla essence and water, mix until incorporated.
  3. Sift in the flour and salt, mix well and using spatula gently fold until smooth
  4. Place 1 tablespoon of batter on 1 of the prepared baking trays (with parchment paper or silicone mat), and use the back of spoon to spread it into a circle at approx 9-10cm diameter. Don’t make more than 3 at a time as they set very quickly.
  1. Bake 8-10mins, 180C until the edges of each cookie turn golden brown.
  2. Remove from the oven, using a palette knife gently remove cookie from tray and turn it upside down. Place your message note in the middle of cookie and fold into half to a semicircle. Pick up the cookie and place the straight edge over the lid of a cup and gently bend down both sides to form a crescent-look.
  3. Place the fortune cookie into muffin tray to help shape as it cools. Repeat the remaining batter until finish.
  4. Allow cookies to cool and store in a tight container, or seal it in individual plastic and wrap it nicely as a gift. (Melt chocolate / sugar frosting to decorate fortune cookie at your preference).
