Your tagline mentions your recipes are 70% healthy and 30% indulgent how did your journey with food start?

Everything started ever since the pandemic. My makeup career totally stopped. Instead of continuing to feel stressful and depressed, I decided to heal myself with food. I started to create my own ritual of life by cooking, taking photos, videos and recipe-sharing on my IG account. Most of my posts are about my healthy daily eats. Sometimes I do indulge myself with my favorite foods too. That’s why my tagline mentioned 70% healthy and 30% indulgent.

How did you come up with Matcha Cranberry Cream Cheese Soft Bagel recipe?
I've always baked my own bagels at home. I wanted my bagels to be both healthy and flavourful so I decided to add matcha powder in. Needless to say, the results amazed me.

How did you find using AJISAI / Matcha powder for this recipe?
It's perfection. You get a burst of toasted nuttiness with every single bite you take. Love it!

RECIPE

Matcha Cranberry Cream Cheese Soft Bagel

Recipe makes 6 servings.
Preparation time: 2 hr 5 min
Cooking time: 16-21 min
Total time: 2 hr 21-26 min

Ingredients

Matcha Soft Bagel

255g Bread flour
15g Honey
143g Iced Water
4g Yeast
10g Soften Butter
5g AJISAI / Matcha Powder

Filling
Cream Cheese
Cranberries



Method To Assemble

  1. Sift the flour in a bowl.
  2. Add in all ingredients including the soften butter, mix using a mixer with dough hook low speed 2 minutes and medium speed at 5 minutes. (You can also mix with hand if you don’t have a mixer at home) Mix until all ingredients and knead the dough until smooth. This takes about 10 minutes.
  3. Place the dough into an ungreased bowl, cover and let it sit at room temperature for 30 minutes.
  4. Divide the dough into 6 equal pieces, shape each dough into a ball and let it rest for 10 minutes.
  5. Roll the dough flat about 10cm wide, stuff the cream cheese and cranberry then roll the dough into a long strip about 15 cm. Make sure the filling is tightly wrapped with the dough. Lastly, make a round shape with long strip dough, tightly pinch both tail ends together so it doesn’t come apart when boiled.
  6. Cover the stuff bagels and let it sit at room temperature for 50 – 60 minutes.
  7. Fill a pot with 3 liters water and set on medium heat and bring it to boil.
  8. Drop the bagel and cook each side 30 seconds. Remember to cook the bagel one by one.
  9. Remove the boiled bagels from the water and let it drip before placing it on the baking sheet.
  10. Preheat your oven at 170C while boiling the bagels.
  11. Baked your bagel at 170C for 10 – 15 minutes.
  12. Remove the bagels from the oven and place on the cooling rack for 10 minutes. Then Enjoy!
