What do you do for a living?

I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?

I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetising and visually appealing in the photo.

How did you come up with Houjicha Macademia Brownies recipe?

Came across a Matcha Brownies recipe online and I decided to modify it with TSUBAKI / Houjicha powder, pairing with Macademia nuts to enhance the flavour and texture.

Why did you choose TSUBAKI / Houjicha powder for this recipe?

Since the recipe doesn’t contain any chocolate or cocoa like normal brownie does, it is super rich with the nutty, roasty and caramel flavours of Houjicha.

RECIPE

Houjicha Macademia Brownies

Recipe makes 16 servings.

Preparation time: around 1 hour
Cooking time: 30 min
Total time: around 1 and half hours

Ingredients

4 tbsp TSUBAKI / Houjicha Powder
½ cup All Purpose Flour
¼ tsp Salt
¼ tsp Baking Powder
113g Unsalted Butter, room temperature
½ cup Brown Sugar
2 Large Eggs
1 tsp Pure Vanilla Extract
80g Macademia Nuts, crushed (or any other preferred nuts)
Some coarse salt (optional)



Method To Assemble

  1. Preheat oven to 180°C and grease an 6-inch (or 8-inch) square metal cake pan.
  2. In a mixing bowl, sift in the flour and Houjicha powder. Add salt and baking powder and whisk together. Set aside.
  3. In the bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla extract and mix completely.
  4. Add the flour mixture and mix just until no traces of flour remain. Add in crushed Macademia nuts and mix well.
  5. Pour batter into the cake pan and spread into an even layer. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Sprinkle some coarse salt on the surface (optional). Allow to cool completely before cutting it into 16 pieces evenly.
