The mix of savoury and sweet dishes in your Instagram looks stunning! When did your passion for food begin?
I grew up surrounded by many varieties of food as my family and relatives work in the food industry. My favourite memory is when my dad would bring me to the international food trade exhibitions and visit the production plants whenever he had an overseas business trip. I also enjoy watching cooking shows since I was young, it inspired me to craft things with my own hands. It is the feeling of satisfaction after seeing the result of my hard work that gets me.

What's your biggest challenge in creating these mouth-watering recipes?
Usually, I would draw and write down the ideas before making any dishes. However, sometimes the food may not turn out like how I wanted it to taste or look. Even so, I learned to keep trying and not give up. Eventually, it will turn out amazing!

Personal tips for your recipe viewers when working with Matcha recipes.
It was my first time experiencing different types of matcha powder. naturally, it took me a long time to understand and distinguish the differences. Each and every one has it's own distinct flavour profile. You definitely have to try them all as everyone has their own preferences of taste.

What is your inspiration for Houjicha Coconut Ice Cream recipe?
I recently purchased some Salted Cacao Nibs and thought they would go well with AKANE / Houjicha powder, making this combo a sweet and savoury flavour. This recipe is also vegan-friendly.

How did you find using AKANE / Houjicha in your recipe?
It has a smoky and deep roasted aroma that I enjoy. And adding extra cacao into the mixture helps enhance the flavour even more. 

RECIPE

Houjicha Coconut Ice Cream

Serve: 4-5 servings
Prep time: 15 mins
Making time: 2 hr 15 mins
Freezing time: 3 hrs
Total time: 5 hr 30 mins +/-

Ingredients

120g Cashew Nut (soaked at least 5hrs or overnight)
350g Coconut Milk (preferably full-fat, for thicker consistency)
100g Sugar

Houjicha Liquid
120ml Coconut Water / Water
5 tsp AKANE / Houjicha Powder (sieved)

Salted Cacao Nibs

*Prepare sea salt & a bowl of ice (stainless steel bowl)


Method To Assemble

  1. Combine AKANE / Houjicha powder and coconut water/water with YUKIWA / Matcha Hand Mixer or a whisk until the powder dissolves completely. Set aside.
  2. Use a food processor or blender to blend the soaked cashew nut, coconut milk, sugar, and AKANE / Houjicha liquid until smooth and creamy.
  3. Pour the mixture into a stainless steel bowl and chill in the fridge for 30 mins.
  4. In another larger stainless steel bowl, put sea salt and ice.
  5. Then, take out the bowl of mixture and place it on the bowl of ice with sea salt. It helps to keep the temperature of the mixture low.
  6. Use a hand mixer to mix for 15 mins on low speed. Then, cover with a cling film and put it back in the freezer for 30 mins.
  7. After freezing for 30 mins, take out the bowl of mixture and use a hand mixer to mix for 15 secs on low speed. Then, cover with a cling film and put it back in the freezer for 30 mins.
  8. Repeat step 7 three times until you get a sticky/thick consistency. On the last round, sprinkle the desired amount of salted cacao nibs before you mix.
  9. Then, transfer it to an airtight container and freeze for at least 3 hours.

Notes:
Work with ice-cold stainless steel bowls.
If you have an ice-cream machine at home, you could pour the mixture into the machine and churn it according to the instructions on the machine.
