Your tagline mentions your recipes are 70% healthy and 30% indulgent how did your journey with food start?

Everything started ever since the pandemic. My makeup career totally stopped. Instead of continuing to feel stressful and depressed, I decided to heal myself with food. I started to create my own ritual of life by cooking, taking photos, videos and recipe-sharing on my IG account. Most of my posts are about my healthy daily eats. Sometimes I do indulge myself with my favorite foods too. That’s why my tagline mentioned 70% healthy and 30% indulgent.

RECIPE

Healthy Matcha Oatmeal Waffles

Recipe makes 1-2 servings.
Preparation time: 16 min
Cooking time: 14 min
Total time: 30 min

Ingredients

Matcha Oatmeal Waffles
½ cup of Greek yogurt
½ cup of milk (can be replace with any milk of your choice)
1 ½ cup of ground oats or oat flour
1 tbsp cornstarch
5g AJISAI / Matcha powder
2 tbsp monk fruit sweetener (can be replace with any sweetener of your choice)
1 whole egg
2 tsp baking powder

Matcha Sauce
3 tbsp hot water
1 tsp AJISAI / Matcha powder
1 tbsp monk fruit sweetener (can be replace with any sweetener of your choice)
1 tsp of cornstarch



Method For Matcha Sauce

  1. Sift the matcha powder using a drainer for fine matcha powder.
  2. Add in sweetener and hot water; make sure the matcha powder and sweetener dissolve in the hot water and no lumps.
  3. Get a saucepan and cook the matcha sauce in medium low heat.
  4. Add in cornstarch and cook until it's slightly thickened.
  5. Set aside and let it cool.


Method For Waffles

  1. Add all the ingredients into a blender.
  2. Blend until smooth to a thick consistency, set aside and let it rest for 10 minutes.
  3. While the batter is resting, preheat the waffle maker and grease with some coconut oil or butter.
  4. Pour the batter on the hot waffle maker, cook for 3 – 4 minutes or until golden crust is formed.
  5. Let it cool on a wire rack for 3 – 5 minutes, then serve it with your favourite topping, drizzle the matcha sauce and enjoy!
