The mix of savoury and sweet dishes in your Instagram looks stunning! When did your passion for food begin?
I grew up surrounded by many varieties of food as my family and relatives work in the food industry. My favourite memory is when my dad would bring me to the international food trade exhibitions and visit the production plants whenever he had an overseas business trip. I also enjoy watching cooking shows since I was young, it inspired me to craft things with my own hands. It is the feeling of satisfaction after seeing the result of my hard work that gets me.

What's your biggest challenge in creating these mouth-watering recipes?
Usually, I would draw and write down the ideas before making any dishes. However, sometimes the food may not turn out like how I wanted it to taste or look. Even so, I learned to keep trying and not give up. Eventually, it will turn out amazing!

Personal tips for your recipe viewers when working with Matcha recipes.
It was my first time experiencing different types of matcha powder. naturally, it took me a long time to understand and distinguish the differences. Each and every one has it's own distinct flavour profile. You definitely have to try them all as everyone has their own preferences of taste.

What is your inspiration for Genmaicha Nachos with Fruits Salsa recipe?
The idea of making Mexican style came across my mind spontaneously. And my uncle sent us some very delicious homegrown papayas from Thailand. So I thought I could make something using the ingredients I had on hand.

How did you find using MOKUREN / Genmaicha in your recipe?
Genmaicha adds layers to the combo, as it releases the roasted rice-cracker aroma through the taste, which I really like.

RECIPE

Genmaicha Nachos with Fruits Salsa

Serves 14-16 mini tortillas.
Prep time: 30 mins
Resting time: 10 mins
Total time: 40 mins

Ingredients

Matcha Tortilla Chips
110g All-Purpose Flour
5g MOKUREN / Genmaicha powder (sieved)
2g Baking Powder
1.5g Salt
20g Olive Oil/Veg. Oil
66g Warm Water

Fruits Salsa
3–4 pcs Calamansi juice
2 cups Papaya (diced)
1 cup Pear (diced)
Pomegranate
Mint Leaves


Method For Genmaicha Tortilla Chips

  1. Combine all the ingredients in a mixing bowl, mix and knead to become a dough.
  2. Then, cover the dough with a damp kitchen towel, and let it rest for about 10mins.
  3. Divide the dough into 14 – 16 mini doughs equally.
  4. Dust some flour on the countertop and rolling pin to prevent the dough from sticking.
  5. Use a rolling pin to roll out each mini dough thinly (as thin as possible so that you’ll get some crispy chips).
  6. Preheat the Air-fryer to 160°C.
  7. Air-fry for about 6 - 7 mins at 150°C (cooking times may vary, depending on the size of the tortilla).
  8. Let cool, and break them into small triangle pieces like chips.

Method For Fruits Salsa

Combine all the fruits and mint leaves with a squeeze of calamansi juice in a mixing bowl. Mix well and cover it. Chill in the fridge (you may prepare the Fruits salsa while waiting for the dough to rest).

Method To Assemble

Serve the Genmaicha Tortilla chips with the citrusy fruits salsa.
