Genmaicha Apam Balik

Ingredients
Batter
80g All-purpose flour (sieved)
50g Rice flour
1 ½ tsp MOKUREN / Genmaicha powder
¼ tsp Baking soda
½ tsp Instant yeast
50g Sugar
140g Water
1 Egg
A pinch of salt
1 tsp Salted butter
Filling
20g Sugar
25g Roasted peanuts (finely chopped)
3 tbsp Red bean paste
*Prepare a non-stick pan (I used 24cm)
Method To Assemble
- Finely chop the peanuts into fine bits and sieve the all-purpose flour.
- For the batter, whisk in all-purpose flour, rice flour, MOKUREN / Genmaicha powder, baking soda, instant yeast, sugar, water, egg and a pinch of salt into a bowl and mix until no lumps and smooth.
- Cover it with cling film and let the batter rest for 1 hour and 30 min.
- The batter should look foamy and bubbly after resting. Stir before using it.
- Place a non-stick pan on low heat and melt some butter. Gently pour the batter into the pan with a ladle, about 2 ½ scoops. In circular motions, use the back end of the ladle to even out the batter. Cover the pan with a lid for 1 to 2 min until bubbles form.
- Take the lid, sprinkle a generous amount of sugar and roasted peanut. Lastly, spread a generous amount of red bean paste on top.
- Remain the pan on low heat. Cover the pan with a lid for another 2 min until fully cooked.
- Take off the lid. Very carefully, use a spatula to run through the edges and fold the Apam Balik in half.
- Transfer to a cutting board and cut into 3 equal pieces.
- Repeat the process with the remaining batter.
