The mix of savoury and sweet dishes in your Instagram looks stunning! When did your passion for food begin?

I grew up surrounded by many varieties of food as my family and relatives work in the food industry. My favourite memory is when my dad would bring me to the international food trade exhibitions and visit the production plants whenever he had an overseas business trip. I also enjoy watching cooking shows since I was young, it inspired me to craft things with my own hands. It is the feeling of satisfaction after seeing the result of my hard work that gets me.

What's your biggest challenge in creating these mouth-watering recipes?

Usually, I would draw and write down the ideas before making any dishes. However, sometimes the food may not turn out like how I wanted it to taste or look. Even so, I learned to keep trying and not give up. Eventually, it will turn out amazing!

Personal tips for your recipe viewers when working with Matcha recipes.

It was my first time experiencing different types of matcha powder. So, it took me a long time to understand each of them, especially trying to distinguish their uses and differences. You definitely must try every different type of matcha powder because everyone has their own preference of taste.

How did you come up with Genmaicha Apam Balik recipe?

It was a spontaneous thought; everything was really impromptu. It dawned on me one day when I passed by a small stall selling Apam Balik, which so happens to be one of my favourite Malaysian street food. It got me thinking - would this be great with MOKUREN / Genmaicha powder? I decided to give this a go, and it turned out to be this beautiful creation!

MOKUREN / Genmaicha adds this roasted brown rice crackerish aroma to the Apam Balik, which compliments  the sweetness of the red bean and peanuts too!

RECIPE

Genmaicha Apam Balik

Makes 6 slices
Preparation time: 10 min
Rest time: 1 hr 30 min
Cooking time: 5 min
Total time: 1 hr 45 min

Ingredients

Batter
80g All-purpose flour (sieved)
50g Rice flour
1 ½ tsp MOKUREN / Genmaicha powder
¼ tsp Baking soda
½ tsp Instant yeast
50g Sugar
140g Water
1 Egg
A pinch of salt
1 tsp Salted butter

Filling
20g Sugar
25g Roasted peanuts (finely chopped)
3 tbsp Red bean paste

*Prepare a non-stick pan (I used 24cm)



Method To Assemble

  1. Finely chop the peanuts into fine bits and sieve the all-purpose flour.
  2. For the batter, whisk in all-purpose flour, rice flour, MOKUREN / Genmaicha powder, baking soda, instant yeast, sugar, water, egg and a pinch of salt into a bowl and mix until no lumps and smooth.
  3. Cover it with cling film and let the batter rest for 1 hour and 30 min.
  4. The batter should look foamy and bubbly after resting. Stir before using it.
  5. Place a non-stick pan on low heat and melt some butter. Gently pour the batter into the pan with a ladle, about 2 ½ scoops. In circular motions, use the back end of the ladle to even out the batter. Cover the pan with a lid for 1 to 2 min until bubbles form.
  6. Take the lid, sprinkle a generous amount of sugar and roasted peanut. Lastly, spread a generous amount of red bean paste on top.
  7. Remain the pan on low heat. Cover the pan with a lid for another 2 min until fully cooked.
  8. Take off the lid. Very carefully, use a spatula to run through the edges and fold the Apam Balik in half.
  9. Transfer to a cutting board and cut into 3 equal pieces.
  10. Repeat the process with the remaining batter.
