The mix of savoury and sweet dishes in your Instagram looks stunning! When did your passion for food begin?
I grew up surrounded by many varieties of food as my family and relatives work in the food industry. My favourite memory is when my dad would bring me to the international food trade exhibitions and visit the production plants whenever he had an overseas business trip. I also enjoy watching cooking shows since I was young, it inspired me to craft things with my own hands. It is the feeling of satisfaction after seeing the result of my hard work that gets me.

What's your biggest challenge in creating these mouth-watering recipes?
Usually, I would draw and write down the ideas before making any dishes. However, sometimes the food may not turn out like how I wanted it to taste or look. Even so, I learned to keep trying and not give up. Eventually, it will turn out amazing!

Personal tips for your recipe viewers when working with Matcha recipes.
It was my first time experiencing different types of matcha powder. naturally, it took me a long time to understand and distinguish the differences. Each and every one has it's own distinct flavour profile. You definitely have to try them all as everyone has their own preferences of taste.

What is your inspiration for Genmai Crepe & Caramalized Apple recipe?
I've been getting the autumn vibes late, which means it's time for some caramelized apples. To keep things simple, I'm using oat milk as the base liquid, which complements the SUISEN / Genmai flavour, and no other spices, so you can experience the savouriness and aroma of roasted brown rice in every mouthful.

How did you find using SUISEN / Genmai in your recipe?
It was fun to experiment with SUISEN / Genmai powder. Whenever I visit Niko Neko it has always been one of my top picks.

RECIPE

Genmai Crepe & Caramalized Apple

Serves 3 – 4 Crepes
Prep & cooking time: 30 mins
Resting time: 30 mins
Total time: 1 hour

Ingredients

Genmai Crepe
10g Glutinous Flour
6g SUISEN / Genmai powder (sieved)
44g Cake flour (sieved)
10g Sugar
A pinch of salt
95g Oatmilk

Caramelized Apple
25g Sugar / Coconut Sugar
1 Big Apple (cubed)
1 Tbsp unsalted butter
Your choice of nuts (roughly chopped)
A pinch of salt


Method For Genmai Crepe

  1. Combine all the ingredients in a mixing bowl until well incorporated.
  2. Then, cover the batter with a cling film and let it rest in the fridge for 30mins.
  3. Heat up a lightly greased frying pan on low-medium heat.
  4. Scoop the batter onto the pan with a ladle and cook for about 1 – 2mins on each side. Carefully run a spatula around the crepe’s edge, then flip it over to cook the other side (Note: Flatten the batter evenly using the back of the ladle. Not to thin, as it will turn crispy and crack when you fold it later).
  5. Transfer the crepe on a cooling rack. Repeat the same with the rest.

Method For Caramelized Apple

  1. Melt the sugar in the pan over low-medium heat.
  2. When the sugar has melted, add the apples, butter, and nuts to the pan. Stir and cook for about 3 mins.
  3. Then, add a pinch of salt and turn the heat low. Continue to cook until the apples become tender and nicely caramelized on each side. It should take not more than 10 mins.

Method To Assemble

  1. Scoop 1-2 tbsp of Caramalized Apple onto the crepe and carefully wrap it.
  2. You may also serve it with a scoop of vanilla ice-cream.
