What do you do for a living?
I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?
Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?
I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetizing and visually appealing in the photo.

How did you come up with Candy Cane Matcha Latte?
‘Tis the season to be jolly and enjoy a cup of warm and delicious beverage that soothe your soul. Hot chocolate with candy cane is one of the easy-to-make yet amazing Christmas treats. Therefore, I decided to modify it with matcha instead of chocolate as the base.

Why did you choose YURI / Matcha powder for this recipe?
YURI / Matcha has a delightfully soothing blend of savoury umami, strong grassy notes, with a trace of gentle bitterness which I think it’s the perfect choice to balance the overall sweetness coming from marshmallow, chocolate and candy cane. What got me surprised is the combination of matcha and peppermint is unexpectedly good!

RECIPE

Candy Cane Matcha Latte

Serving: 1 glass
Preparation time: 10 min
Cooking time: 5 min
Total time: 15 min

 

Ingredients

1 tbsp YURI / Matcha powder
250 ml Oat Milk (or any other preferred milk)
½ tsp Maple Syrup
2 Peppermint Candy Canes
Some Mini Marshmallows

Chocolate Ganache Drip
47.5 g Chocolate chips
40 ml Whipping Cream (or Heavy Cream)


Method To Assemble

  1. Place the semi-sweet chocolate chips in a heatproof bowl and set aside.
  2. Pour whipping cream in a heatproof bowl and heat up in the microwave for 30-45 seconds, until it's steaming and just starting to bubble.
  3. Pour the whipping cream over the chocolate chips, making sure it's fully covered with cream. Allow the mixture to sit for 1-2 minutes.
  4. Stir slowly until the cream and chocolate are fully combined and mixture is smooth.
  5. Gently drip the chocolate ganache along the edge of the glass using a spoon. The remaining chocolate ganache can be stored in the fridge for up to a month.
  6. Place the glass in the fridge to set the chocolate drip for 5 – 10 min.
  7. While waiting for the chocolate drip to set, smash ½ of the candy canes into small pieces and set aside.
  8. In a pot, heat 200ml of oat milk over a medium heat until it begins to simmer. Remove from heat and set aside.
  9. In a cup, combine 50ml of oat milk, YURI / Matcha powder and maple syrup. Whisk together with YUKIWA / Matcha Mixer until well combined and fluffy.
  10. Remove the glass from the fridge. Pour the warm oat milk into the glass.
  11. Gently pour in the matcha mixture. Add in generous amount of mini marshmallows.
  12. Dust over some YURI / Matcha powder and sprinkle the crushed candy cane.
  13. Gently place in the candy cane sticks at the side and it’s ready to serve!
