Your tagline mentions your recipes are 70% healthy and 30% indulgent — how did your journey with food start?
Everything started ever since the pandemic. My makeup career totally stopped. Instead of continuing to feel stressful and depressed, I decided to heal myself with food. I started to create my own ritual of life by cooking, taking photos, videos and recipe-sharing on my IG account. Most of my posts are about my healthy daily eats. Sometimes I do indulge myself with my favorite foods too. That’s why my tagline mentioned 70% healthy and 30% indulgent.

Any tips to your viewers on living a health-conscious life?
There is such a strong connection between happiness and food. Healthy eating can be fun and creative, but don't forget to indulge yourself with your favorite food every now and then. Be happy and wise with the food choices you make. You deserve to nourish your body with the nutrients it needs to lead a healthy life.

As the health benefits of Matcha are endless, it's definitely great to consume it in your daily meals!

While I saw my colleague hanging the Christmas wreath on our studio door, my mind just popped up with the edible Christmas wreath with my favourite matcha flavour.

RECIPE

Matcha Christmas Wreath Bread

Prep time: 10 mins prep + 30 mins rest
Bake time: 20 mins
Total time: 1 hr

Ingredients

10g AJISAI / Matcha Powder
250g Bread Flour
120ml lukewarm milk
1 whole egg
26g caster sugar
3g dry yeast
28g soft unsalted butter

Filling
30g soft unsalted butter
20g icing sugar
1 whole egg
50g coconut flakes
20g dry cranberries


Method To Assemble

  1. In a bowl, add in sugar, lukewarm milk and dry yeast, stir it and let it rest for 10-15 minutes to active the yeast.
  2. In a stand mixer bowl, add in bread flour, egg and the active yeast. Start kneading with low speed until all ingredient combine together. Change to medium speed and knead for 10-15 minutes.
  3. Add in unsalted butter and continue to knead for 5-6 minutes. The dough should turn out very soft and slightly sticky.
  4. Place the dough in a clean bowl, cover up with lid or plastic wrap and set aside in a warm place. Let the dough rise for about an hour or until doubles in size.
  5. While the dough is rising, let’s make the filling. Combine all the filling ingredients and mix well.
  6. Meanwhile, the dough has doubled in size and very airy. We need to deflate it and expel the gases.
  7. Transfer the dough onto the work surface, roll the dough into a rectangle, spread the filling over the entire surface of the dough. Make sure to smooth it evenly.
  8. Starting on the long end, roll the dough up tightly. Seal the dough by pinching the edge against the roll.
  9. Next, cut the roll in half lengthwise. Then loosely twist the halves around each other, keeping the cut side up.
  10. Shape the bread rope into a wreath and pinch the end together to seal.
  11. Transfer the bread onto a baking tray covered with parchment paper.
  12. Preheat the oven at 180°C. Bake the bread wreath at 180°C for 20 minutes.
  13. When the bread wreath is done, cool them and enjoy!
