I’m an Interactive Multimedia Designer who works in a digital marketing agency. I’m passionate in creating visuals on variety of platforms including photography, illustration and 2D animation. I believe that colourful and meaningful artworks will bring joy to viewer’s life!

You've recently started to share your baking creations on your Instagram. Has baking always been a passion of yours?

Baking has always been my passion but I couldn't find a time to do it. Due to Movement Control Order (MCO) in Malaysia during March this year, I finally took the opportunity to start baking. It all started by creating the trendy Dalgona drink using Niko Neko Matcha powder during MCO period. As I really love eating bread, so I asked myself why not try to bake one? From there, I experienced the fun of baking.

What's the most enjoyable part of baking in your experience?

I love baking bread! The process of kneading dough with your own hands is so enjoyable! Even though it’s not easy to knead dough perfectly by hand, it’s so satisfying when I succeed! Besides, what makes baking enjoyable is when my creations look appetising and visually appealing in the photo.

How did you come up with Genmaicha Bursting Mochi Bread? / Why did you choose MOKUREN for this recipe?

Stumbled across a Korean Mochi Bread recipe, also as known as dinosaur egg because of its crackly surface with black sesame seed. What’s more interesting is that this recipe is actually similar to making cream puff. In this case, part of the flour is replaced with tapioca starch to make it chewy. Just like cream puff, the center part of the bread is hollow where I can fill up with desired fillings. Therefore, I decided to come up with this delicious recipe to highlight the savoury, rice-crackerish aroma of MOKUREN / Genmaicha.

The savoury, rice-crackerish aroma of MOKUREN / Genmaicha matches well with this savoury mochi bread as it contains black sesame and soy sauce. Each bite delivers a chewy crust loaded with rice-crackerish flavour explodes in your mouth! Moreover, you can experience 2 flavours in 1 and lingering Matcha aftertaste!

RECIPE

Genmaicha Bursting Mochi Bread

Preparation time: around 1 hour 5 min
Cooking time: 40 min
Total time: around 1 hour 45 min

Ingredients

For Mochi Bread

20g All Purpose Flour
45g Tapioca Starch
10-20g Black Sesame (Roasted)
35g Water
20g Almond Milk (or other milk option)
10g Unsalted Butter
15g Sugar
1g Salt
1tsp Soy Sauce
1 egg

For Genmaicha Custard Cream

2 Egg Yolks
10g Cake Flour
10g Corn Starch
32g Sugar (divide into 2 portions)
213g Almond Milk (or other milk option)
1tbsp MOKUREN / Genmaicha powder
1-2g Vanilla Extract
15g Whipping Cream
13g Unsalted Butter



Method To Assemble

For Mochi bread

1. Sift All Purpose flour and measure all the ingredients ahead.
2. In a small pot, mix water, almond milk, sugar, butter and salt. Boil with low heat and stir continuously. Turn off the heat when it’s boiled.
3. Pour in the flour immediately. Mix well and turn on low heat again and stir for 30-60 sec until it turns into a dough.
4. Add in tapioca starch and black sesame. Mix well and let cool for a few minutes.
5. Beat the egg well and add half portion to the dough. Mix well and continue adding a little of egg mix at a time until the batter forms a V shape at the end of the spatula when you slowly lift it up (It’s normal if you didn’t add in all the egg mix).
6. Transfer the batter into pipping bag. Prepare a baking tray with parchment paper and pipe 7 or 8 mounds on the parchment paper, about 2 inch each. Keep them around 2 inches apart and avoid making peaks (If you do get peaks, wet finger tips lightly with water and smooth them out). Mist the surface with water.
7. Bake in a preheated 175°C oven for 17-18min. Reduce the heat to 160°C and bake for another 10-12min. Transfer to wire rack to cool completely.

For Genmaicha Custard Cream

1. In a bowl, mix egg yolks, cake flour, MOKUREN / Genmaicha powder, corn starch and 16g of sugar.
2. In a small pot, mix almond milk, whipping cream, vanilla extract, and 16g sugar. Boil in low heat and stir continuously until small bubbles formed at the side.
3. Gradually pour into egg yolk mixture while stirring.
4. Pour mixture back to the small pot and boil with low heat and stir vigorously until it thickened and smooth.
5. Turn off the heat and add butter. Mix well.
6. Sift and cover with cling wrap to cool. Stir until smooth before use.

Method to resemble:

1. Transfer the MOKUREN / Genmaicha custard cream into piping bag.
2. Poke a hole at the bottom or the side of the mochi bread.
3. Pipe in the cream and it’s ready to serve.
